  • 3 tablespoons flour
  • 6 cups chicken broth
  • ⅓ cup half and half
  • 2 (15.5 oz.) cans cannellini beans (drained)
  • 1 teaspoon hot sauce
  • 2 (4 oz.) cans mild green chilies (undrained)
  • 1 ½ lbs. bone-in skinless chicken breast
  • Salt/Pepper
  • 1 (15.25 oz.) can whole kernel sweet corn (drained; can substitute frozen corn)
  • 8 oz. cream cheese (softened)
  • Lime wedges
  • Diced avocado
  • Sour cream
  • Tortilla strips
  • Fritos
  • Monterey or Pepper Jack cheese for serving

Instructions

  1. Combine seasoning blend ingredients in a small bowl and set aside.
  2. In a large pot, melt butter over medium heat; add onions and jalapeños—sauté until softened. Stir in garlic.
  3. Sprinkle flour over the vegetables; cook for 2 minutes.
  4. Gradually stir in chicken broth and half-and-half until smooth.
  5. Blend a portion of the beans with broth until smooth; return to pot.
  6. Mix in seasonings, hot sauce, Worcestershire sauce, green chilies, and corn. Bring to a boil.
  7. Add seasoned chicken; simmer uncovered for 15-20 minutes until cooked through.
  8. Shred chicken and stir back into the chili along with cream cheese until melted.
  9. Adjust seasonings as needed before serving.
