  • 2 cups low-sodium chicken broth
  • 1 can white kidney beans (19 oz), drained and rinsed
  • 1 can sweet corn (12 oz), drained
  • 1 can green chiles (4 oz)
  • 4 ounces cream cheese, room temperature
  • 1 teaspoon green hot sauce
  • 1 teaspoon chili powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • 1 tablespoon cornstarch (optional)
  • 1 tablespoon water (optional)
  • Avocado, lime wedges, salsa, cheese, or jalapenos, for serving

Instructions

  1. Cook the chicken in chicken broth over medium-high heat until fully cooked (165°F), about 15 minutes. Remove and shred.
  2. Return shredded chicken to the pot; add beans, corn, green chiles, hot sauce, chili powder, onion powder, and salt.
  3. Stir in cubed cream cheese; let simmer until melted (about 10 minutes).
  4. If desired for thickness, mix cornstarch with water and add to the chili while simmering.
