  • 3 garlic cloves (minced)
  • 2 stalks celery (or 1/2 small celery root, diced)
  • 2 medium carrots (diced)
  • 2 pounds potatoes (chopped)
  • 1/2 tsp dried marjoram
  • 1 pinch of nutmeg
  • Salt and pepper (to taste)
  • 4 cups vegetable broth (or water)
  • 2 whole bay leaves (optional)
  • 1/3 cup dairy-free cream
  • Fresh parsley (for garnish)
  • Vegan sausage (sliced, optional)

Instructions

  1. In a large pot, heat oil over medium heat. Add diced onion and sauté until translucent (about 3 minutes). Stir in minced garlic, diced celery, carrots, chopped potatoes, and spices; sauté for another minute.
  2. Pour in vegetable broth and add bay leaves if using. Bring to a boil, then reduce heat and simmer for 20 minutes until vegetables are tender.
  3. Carefully blend half of the soup using an immersion blender until smooth. Alternatively, blend in batches using a regular blender.
  4. Return the blended soup to the pot and stir in dairy-free cream. Simmer for an additional few minutes while adjusting seasonings.
  5. Serve hot garnished with fresh parsley and optional vegan sausage slices.
