  • 2 tbsp brown sugar
  • 1.5 cups boneless chicken (cut into chunks)
  • 3 tbsp sesame oil
  • 1 medium onion (chopped)
  • Red bell pepper (chopped)
  • Green bell pepper (chopped)
  • Soy sauce (low sodium)
  • 1/2 tsp black pepper powder
  • 1 tsp garlic powder
  • 1/2 tbsp cornstarch
  • 1/2 tbsp water
  • 1 tsp fresh ginger (minced)
  • 1 tsp fresh garlic (minced)
  • 1/4 tsp paprika
  • Sesame seeds (for garnish)
  • Spring onion greens (for garnish)

Instructions

  1. Prepare the sauce by mixing pineapple juice, brown sugar, soy sauce, ginger, garlic, cornstarch, and water in a bowl; set aside.
  2. Marinate the chicken in salt, garlic powder, black pepper powder, corn starch, and soy sauce for a few minutes.
  3. Heat 1 tbsp of sesame oil in a skillet; add marinated chicken and stir-fry until cooked through (5–7 minutes). Remove from skillet.
  4. In the same skillet, add another 2 tbsp of sesame oil; sauté onion and bell peppers until crisp (3–4 minutes).
  5. Return chicken to the skillet; pour in the prepared sauce and stir well to coat.
  6. Simmer on medium heat until the sauce thickens slightly (3–5 minutes). Adjust seasoning if necessary.
  7. Serve hot over rice or noodles; garnish with sesame seeds and chopped spring onions.
