  • 190g graham cracker crumbs
  • 35g sugar
  • 75g melted unsalted butter
  • 32 oz full-fat cream cheese
  • 325g granulated sugar
  • ½ tsp salt
  • 1 tsp vanilla essence
  • 4 large eggs
  • 120g heavy cream
  • 240g sour cream
  • 1 tbsp cornstarch
  • Juice of 2 lemons (approx. 30ml)
  • 1 lb strawberries

Instructions

  1. Preheat your oven to 350°F (175°C). Combine graham cracker crumbs, sugar, and melted butter in a mixing bowl and press into the bottom of a springform pan.
  2. Bake crust for about 10 minutes until golden; set aside to cool.
  3. Beat cream cheese and granulated sugar until smooth. Add salt, vanilla essence, eggs (one at a time), heavy cream, sour cream, cornstarch, and lemon juice; mix until combined.
  4. Pour filling over cooled crust and bake for about 60–70 minutes until the center is slightly jiggly. Turn off oven and let cool inside with the door ajar for another hour.
  5. For the strawberry compote, combine chopped strawberries, sugar, cornstarch, and lemon juice in a saucepan over medium heat. Cook until thickened (about 5–7 minutes). Allow to cool before pouring over chilled cheesecake.
