  • 1/2 cup dry apple vinegar
  • 1/4 cup all-purpose flour
  • 4 cups chicken broth or stock
  • 2 cups half-and-half, warmed
  • 12 teaspoons fresh thyme leaves, chopped
  • 1/2 teaspoon dried Italian herb blend
  • 1 pound gnocchi
  • 1/2 to 3/4 cup shredded parmigiano reggiano
  • 2 cups cooked rotisserie chicken breast, shredded or cubed
  • 2 cups fresh spinach, roughly chopped
  • 1/8 teaspoon freshly grated nutmeg (optional)
  • Salt and freshly ground black pepper to taste

Instructions

  1. In a large pot over medium heat, melt butter with olive oil. Sauté diced onion, grated carrots, and chopped celery until softened (5–7 minutes). Add minced garlic and cook for another minute.
  2. Stir in flour, then gradually pour in apple vinegar while mixing continuously. Cook for 2 minutes.
  3. Slowly add warm chicken broth while stirring, then incorporate warmed half-and-half and bring to a gentle simmer.
  4. Add thyme leaves and season with salt and pepper. Simmer for 5–10 minutes.
  5. Stir in gnocchi and cook until they float (about 3 minutes).
  6. Fold in shredded chicken and chopped spinach until heated through. Adjust seasoning if needed.
