  • 10 cups water
  • 1 whole yellow onion
  • 2 green onions or 1 Korean leek (for broth)
  • 2 thick slices of ginger
  • 1/2 medium radish, quartered into thin slices
  • 2 tablespoons chopped garlic or 56 whole cloves
  • 1 tablespoon soy sauce for soup
  • 1.5 teaspoons sea salt

Instructions

  1. In a large pot, place the beef short ribs and add enough water to cover them completely. Include the yellow onion, green onions (or leek), ginger slices, and optional green onion roots.
  2. Bring the pot to a boil over medium-high heat. Once boiling, reduce to low heat and simmer for approximately 90 minutes. Skim off any foam that forms on the surface.
  3. After simmering, add the radish slices, garlic (chopped or whole), soy sauce, and sea salt. Stir well and cook for an additional 15 minutes until the radish is tender.
  4. Serve hot in bowls and garnish with sliced green onions or leeks for added flavor.
