  • 140g almond flour
  • 200g all-purpose flour
  • 75g sugar
  • 50cl soy milk
  • 30g cornstarch
  • 3g agar-agar
  • Fresh pineapple sage leaves
  • 1 tsp vanilla extract

Instructions

  1. For the crust: In a food processor, blend the almond flour, all-purpose flour, sugar, and margarine until crumbly. Gradually add water until dough forms. Press into a tart pan and chill for 30 minutes.
  2. Bake: Preheat your oven to 180°C (356°F) and bake the crust for 20-25 minutes until golden brown. Let cool.
  3. Prepare filling: Heat soy milk in a saucepan. In another bowl, mix cornstarch, sugar, and agar-agar. Combine with warm soy milk, whisking until smooth. Cook until thickened; stir in chopped pineapple sage and let cool.
  4. Assemble: Pour the filling into the cooled crust and top with sliced strawberries. Refrigerate for at least two hours before serving.
