  • 2 tablespoons granulated sugar (or honey)
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 1 ½ cups old-fashioned rolled oats
  • 1 cup all-purpose flour
  • ½ cup light brown sugar
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ½ teaspoon ground cinnamon (optional)
  • ½ cup unsalted butter, cold and cut into small cubes
  • ¼ cup honey or maple syrup (optional)

Instructions

  1. In a saucepan, combine chopped strawberries, sugar (or honey), lemon juice, cornstarch, and vanilla extract. Cook over medium heat until thickened.
  2. Preheat the oven to 350°F (175°C) and prepare an 8×8-inch baking pan with parchment paper.
  3. In a bowl, mix oats, flour, brown sugar, baking powder, salt, and cinnamon. Cut in cold butter until crumbly.
  4. Press two-thirds of the mixture into the prepared pan as the base layer.
  5. Spread cooled strawberry filling evenly on top.
  6. Sprinkle remaining crumble over the filling and gently press down.
  7. Bake for 35-40 minutes until golden brown. Cool completely before slicing.
