  • ½ teaspoon vanilla extract
  • Juice and zest of one lemon
  • ¼ cup granulated sugar (for glaze)
  • Juice of half of a lemon (for glaze)
  • 2 Tablespoons warm water (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare your loaf pan by greasing it lightly or lining it with parchment paper.
  2. In a mixing bowl, whisk together flour, sugar, baking soda, and salt.
  3. In another bowl, mix milk, melted butter, egg, vanilla extract, lemon juice, and zest until smooth.
  4. Pour the wet mixture into the dry ingredients and stir gently until just combined; then fold in chopped strawberries.
  5. Pour the batter into the prepared loaf pan and bake for about 60 minutes or until a toothpick comes out clean.
  6. While baking, prepare the glaze by mixing sugar, lemon juice, and warm water until dissolved.
  7. Once baked, cool in the pan for 10 minutes before transferring to a cooling rack. Drizzle with glaze while warm.
