  • 8 tbsp butter
  • ⅓ cup granulated sugar
  • ⅓ cup brown sugar
  • 1 cup mashed bananas (approximately 2 bananas)
  • ⅓ cup maple syrup
  • 2 tsp vanilla extract
  • 3 eggs
  • ¾ cup buttermilk
  • For the Toffee Sauce: 8 tbsp butter, ¾ cup brown sugar (packed), ¾ cup heavy cream

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a baking dish with nonstick spray.
  2. In a mixing bowl, cream together granulated sugar, brown sugar, and butter until fluffy. Mix in eggs, vanilla extract, buttermilk, maple syrup, and mashed bananas.
  3. In another bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
  4. Combine dry ingredients with wet ingredients until just mixed.
  5. Pour batter into prepared dish and bake for 45-55 minutes; check doneness with a toothpick.
  6. For the toffee sauce, melt butter and brown sugar in a pot over medium-low heat; stir in heavy cream and cook until smooth.
  7. Poke holes in the cooled cake and pour over cooled toffee sauce; let soak for at least one hour before serving.
