  • 1 medium yellow onion, diced
  • 4 medium carrots, sliced
  • 4 stalks celery, sliced
  • 4 cloves garlic, minced
  • 8 cups low-sodium chicken stock
  • 2 large boneless skinless chicken breasts (about 1.5 lbs)
  • 8 ounces egg noodles
  • 3 tablespoons fresh parsley, finely chopped
  • 1/2 lemon, juiced
  • 2 dried bay leaves
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste

Instructions

  1. In a slow cooker, add diced onion, sliced carrots, sliced celery, minced garlic, and chicken stock.
  2. Season with salt, pepper, and herbs (bay leaves, thyme, rosemary).
  3. Place chicken breasts on top of the vegetable mixture.
  4. Cook on low for 6-8 hours until chicken is cooked through and veggies are tender.
  5. Remove chicken, shred it with two forks, and return it to the slow cooker.
  6. Add egg noodles and cook on low for an additional 5-10 minutes until tender.
  7. Stir in fresh lemon juice and parsley before serving.
