  • 1 1/2 lbs small to medium carrots
  • 2 tablespoons olive oil
  • 8 oz block-style feta cheese
  • 3/4 cup Greek yogurt
  • 2 teaspoons lemon zest
  • 1 tablespoon honey
  • Spices: sumac, za’atar, kosher salt, black pepper

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. For the whipped feta, blend Greek yogurt, block-style feta, lemon zest, lemon juice, garlic cloves, honey, and olive oil in a food processor until smooth. Season with salt and pepper; refrigerate until ready to serve.
  3. Scrub the carrots clean and pat dry. Toss in a mixing bowl with olive oil, honey, za’atar, sumac, salt, and black pepper until well coated.
  4. Spread carrots on the prepared baking sheet and roast for 20–25 minutes or until fork-tender.
