  • 2 packages yeast (4 1/2 teaspoons)
  • 6 tablespoons shortening or unsalted butter
  • 1 cup granulated sugar
  • 9 cups unbleached all-purpose flour
  • 2 cups hot water
  • 2 eggs (beaten)
  • 3 1/2 cups raspberries
  • 4 ounces cream cheese (at room temperature)

Instructions

  1. Prepare the yeast mixture by dissolving yeast in lukewarm water. Let it sit until bubbly.
  2. In a stand mixer bowl, mix shortening, sugar, and salt with hot water until cool. Stir in flour and the yeast mixture along with beaten eggs.
  3. Gradually add remaining flour using the dough hook until smooth. Knead by hand until the dough is satiny.
  4. Place dough in a greased bowl, cover, and let rise until doubled in size.
  5. Roll out dough into a rectangle, spread softened butter, sprinkle brown sugar, then layer raspberries mixed with granulated sugar and cornstarch.
  6. Roll up tightly and slice into pieces before placing them in a greased baking pan.
  7. Cover rolls to rise again until doubled, then bake at 350°F for about 25-32 minutes until golden brown.
  8. While cooling, whip together cream cheese frosting ingredients and spread over warm rolls.
