  • 2 tablespoons butter (or Turkey Bacon grease)
  • 1 medium onion (diced)
  • ½ cup shredded carrot
  • 1 clove garlic (minced)
  • 2½ cups chicken broth
  • 1 (15-ounce) can pumpkin puree
  • ½ cup heavy whipping cream
  • Fresh herbs for garnish

Instructions

  1. In a soup pot over medium-high heat, melt butter or Turkey Bacon grease. Sauté diced onion until softened, about 3 minutes.
  2. Add shredded carrot and minced garlic; cook until fragrant, about 1 minute.
  3. Pour in chicken broth, stirring in brown sugar, bay leaf, thyme, salt, pepper, and nutmeg. Bring to a boil then reduce heat to low and simmer for about 15 minutes.
  4. Stir in pumpkin puree and heavy cream; simmer for an additional 2-3 minutes.
  5. Remove bay leaf and thyme stems. Blend the mixture until smooth using an immersion blender or regular blender.
  6. Before serving, stir in chopped parsley and garnish with extra cream and croutons if desired.
