  • 1 cup frozen peas
  • 3 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • 3 green onions (chopped for garnish)
  • Salt and pepper to taste

Instructions

  1. Rinse jasmine rice under cold water until clear.
  2. In a medium saucepan, combine rinsed rice with 4 cups water and a pinch of salt. Bring to a boil, then cover and simmer on low heat for 15-20 minutes.
  3. In a large skillet, heat vegetable oil over medium-high heat. Add chicken, season with salt and pepper, and cook until browned (5-7 minutes).
  4. Stir in minced garlic and ginger; cook for 1-2 minutes until fragrant.
  5. Add red bell pepper and frozen peas; cook until tender (3-4 minutes).
  6. Gently fold in diced pineapple; cook for another 2-3 minutes.
  7. In a small bowl, mix soy sauce with any additional seasonings if desired.
  8. Pour sauce over chicken mixture; simmer for another 2-3 minutes.
  9. Add cooked jasmine rice; fold gently to combine all ingredients.
  10. Adjust seasoning if necessary before serving.
  11. Garnish with chopped green onions.
