  • 1 cup pineapple, cubed

  2. Heat olive oil in a skillet over medium heat. Add cubed chicken breast, season with salt and pepper, and cook until browned (about 5-7 minutes).
  3. Add onion, garlic, and red bell pepper to the skillet; sauté until tender (about 3-4 minutes).
  4. Stir in jasmine rice; pour in chicken broth along with soy sauce and ginger. Bring to a simmer.
  5. Gently fold in cubed pineapple; cover skillet and cook on low heat for about 15 minutes or until rice is tender.
  6. Remove from heat and fluff rice with a fork before serving hot.
