  • 2 cloves garlic, minced
  • ½ cup soy sauce
  • ⅓ cup pineapple juice
  • 2 tbsp honey or brown sugar
  • 1 tbsp rice vinegar or apple cider vinegar
  • 1 tsp cornstarch + 1 tbsp water
  • 1½ cups cooked rice
  • 1 cup pineapple chunks
  • ½ red bell pepper, diced
  • ¼ cup green onions, chopped

Instructions

  1. Heat oil in a skillet over medium-high heat. Sauté chicken until browned and cooked through. Remove from pan and set aside.
  2. In the same skillet, add minced garlic and sauté briefly until fragrant.
  3. Add soy sauce, pineapple juice, honey (or brown sugar), and vinegar; simmer for a few minutes.
  4. Stir in cornstarch mixed with water; cook until glossy and slightly thickened.
  5. Return chicken to the pan along with pineapple chunks and red bell pepper; stir to coat evenly in sauce.
  6. Mix in cooked rice until heated through.
  7. Garnish with green onions and optional sesame seeds before serving.
