  • 1 (8-ounce) can crushed pineapple (drained)
  • 1 teaspoon pure vanilla extract
  • 3 cups grated carrots
  • 3/4 cup chopped walnuts
  • 1/2 cup raisins (optional)
  • 1 (8-ounce) package brick style cream cheese (softened)
  • 1/2 cup unsalted butter (softened)
  • 2 cups powdered sugar
  • 1 teaspoon pure vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In one mixing bowl, whisk together flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt.
  3. In another bowl, mix oil with both sugars until well combined. Add eggs one at a time, then stir in drained pineapple and vanilla.
  4. Gradually combine wet and dry mixtures until just mixed; fold in grated carrots and walnuts.
  5. Pour batter into the prepared pan and bake for about 40 minutes or until a toothpick comes out clean.
