  • 1 teaspoon Cinnamon
  • 1/2 cup Unsalted butter (melted) or Coconut oil
  • 1 cup Light brown sugar
  • 2 large Eggs
  • 1/2 cup Sour cream or Plain full-fat Greek yogurt
  • 1/2 cup Whole milk or Almond/oat milk
  • 2 teaspoons Vanilla extract
  • 1 cup Finely chopped pecans
  • 1/2 cup Whole pecan halves
  • 1/4 cup Brown sugar
  • 2 tablespoons Melted butter

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin.
  2. In one bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon.
  3. In another bowl, mix melted butter with brown sugar until smooth; then beat in eggs one at a time followed by sour cream, milk, and vanilla.
  4. Gradually combine dry ingredients with wet ingredients until just blended; fold in chopped pecans.
  5. Fill muffin cups about two-thirds full and top with whole pecan halves and brown sugar.
  6. Bake for 20–22 minutes or until golden brown; let cool before serving.
