  • 3/4 cup firmly packed light brown sugar
  • 1/2 cup creamy peanut butter
  • 2 large eggs
  • 1/2 teaspoon vanilla extract
  • 1/4 cup sour cream
  • 1 1/2 cups mashed banana (about 3 or 4 medium overripe bananas)
  • 1/2 to 2/3 cups chopped nuts (such as pecans, walnuts, hazelnuts, or peanuts, optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9" x 5" loaf pan.
  2. In a bowl, whisk together flour, cinnamon, baking powder, baking soda, and salt; set aside.
  3. Cream softened butter with brown sugar and peanut butter using an electric mixer until fluffy. Add eggs one at a time, mixing well after each addition. Stir in vanilla.
  4. Gradually add the dry ingredients alternately with sour cream until just combined.
  5. Fold in mashed bananas and optional nuts gently.
  6. Pour batter into the prepared pan and bake for about 50 to 55 minutes until golden brown and a toothpick comes out clean.
  7. Allow cooling in the pan for about 10 minutes before transferring to a wire rack to cool completely.
