  • 3 cups chopped peaches
  • 1/4 cup granulated sugar
  • 2 tablespoons fresh lemon juice (or water)
  • 3 tablespoons cornstarch
  • 3/4 cup flour
  • 1/4 cup large flake oats
  • 1/3 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/3 cup unsalted butter (melted)
  • 1 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 45 tablespoons cream (or milk)

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
  2. In a medium bowl, whisk together the flour, powdered sugar, and salt. Stir in melted butter until fully combined.
  3. Press this mixture into the bottom of your prepared pan evenly. Bake for about 15 minutes until lightly golden.
  4. Toss chopped peaches in another bowl with granulated sugar, lemon juice, and cornstarch until well coated.
  5. In another bowl, mix together flour, oats, brown sugar, and cinnamon. Stir in melted butter until it resembles wet sand.
  6. Spread the peach mixture over the baked shortbread base evenly. Crumble the oat topping over this layer using your hands. Bake everything together at 350°F for about 35-45 minutes until golden brown on top.
  7. Allow cooling completely once removed from the oven. In a small bowl, whisk together powdered sugar, vanilla extract, and cream until smooth. Adjust consistency as needed before drizzling over cooled bars.
