  • 1 Tbsp sunflower oil
  • 3/4 cup cornstarch
  • 1/3 cup all-purpose flour
  • 1/2 cup white distilled vinegar
  • 1/2 cup cane sugar
  • 1/4 cup water
  • 1/4 cup soy sauce (or coconut liquid aminos)
  • 1 Tbsp orange juice concentrate
  • 1/2 tsp crushed red pepper flakes
  • 2 cloves garlic (crushed)
  • 1/2 tsp zested ginger root (peeled)
  • 1 tsp sesame oil
  • 1 tsp rice apple vinegar (or apple cider vinegar)

Instructions

  1. Cut chicken into bite-sized pieces. In a bowl, whisk together egg, salt, pepper, cornstarch, and flour; add sunflower oil to form a thick batter.
  2. Heat oil in a deep fryer or large pot over medium heat. Dip each chicken piece into the batter and fry until golden brown (5–7 minutes). Drain on paper towels.
  3. For the sauce, combine vinegar, sugar, water, soy sauce, red pepper flakes, garlic, ginger zest, orange juice concentrate, sesame oil, and rice apple vinegar in a saucepan over medium heat. Simmer for about 5 minutes.
  4. Mix cornstarch with water to create a slurry; add to the sauce while stirring until it thickens.
  5. Toss fried chicken pieces in the sauce until evenly coated.
  6. Serve hot over rice or noodles.
