  • 30 Oreo cookies (for crust)
  • 5 tablespoons unsalted butter (melted)
  • 24 oz cream cheese (full-fat, brick-style)
  • 1 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 cup sour cream
  • 3 large eggs
  • 1215 Oreo cookies (chopped for filling)
  • 4 oz semi-sweet chocolate (for ganache)
  • ½ cup whipping cream

Instructions

  1. Preheat your oven to 325°F (170°C) and prepare a springform pan by wrapping it in aluminum foil and greasing it.
  2. For the crust, crush 30 Oreo cookies, mix with melted butter, and press into the bottom of the pan.
  3. In a large bowl, beat cream cheese until smooth; add sugar and cornstarch, then mix in sour cream and vanilla extract.
  4. Incorporate eggs one at a time, mixing well after each addition. Fold in chopped Oreos.
  5. Pour the filling over the crust and bake in a water bath for about 55 minutes or until set but slightly jiggly.
  6. Cool in the oven with the door ajar for an hour before refrigerating for at least four hours.
  7. To make ganache, heat whipping cream until simmering, pour over chopped chocolate, stir until smooth, then pour over cooled cheesecake.
  8. Decorate with whipped cream and crushed Oreos before serving.
