  • 1 (3 ounce) lime jello
  • 1 cup shredded coconut
  • 1 teaspoon coconut extract
  • 3 tablespoons green sprinkles
  • 1 (16 ounce) key lime frosting tub
  • 1 cup toasted coconut
  • Zest of 2 limes

Instructions

  1. Preheat your oven to 350°F and grease the mini bundt pan with non-stick cooking spray.
  2. Prepare the cake batter according to package instructions for both boxes of cake mix.
  3. Divide the batter into two bowls: one with about 13-1/3 cups and the other with about 13-1/4 cups.
  4. In the first bowl, mix in shredded coconut and coconut extract along with green sprinkles. In the second bowl, blend in lime jello.
  5. Fill each mini bundt well with 1/3 cup of coconut batter followed by 1/4 cup of lime batter.
  6. Bake for approximately 22 minutes or until a toothpick comes out clean.
  7. Cool in the pan for about 20 minutes before transferring to a wire rack.
  8. For frosting, microwave key lime frosting until runny, then drizzle over cooled cakes and garnish with toasted coconut and lime zest.
