  • 2 red bell peppers
  • 1 large red onion
  • 2 cups cherry tomatoes
  • 1 cup Kalamata olives
  • 4 cloves garlic
  • 1/4 cup sun-dried tomatoes
  • 2 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp dried thyme
  • Juice of 1 lemon
  • 0.5 cup crumbled feta cheese

Instructions

  1. Prep all ingredients by chopping vegetables and cutting chicken into bite-sized pieces.
  2. In a skillet over medium-high heat, add 1 tbsp olive oil and sear seasoned chicken until golden brown (6–8 minutes). Remove from skillet.
  3. Sauté sliced onions and minced garlic in the same skillet until fragrant. Add zucchini, bell peppers, cherry tomatoes, sun-dried tomatoes, and herbs; cook until tender yet crisp.
  4. Return chicken to the skillet; toss to combine with vegetables and season to taste.
