Ingredients

Scale
  • 11/4 lbs boneless, skinless chicken thighs
  • 1/2 cup gluten-free flour
  • 2 tablespoons extra virgin olive oil
  • 1 cup chicken broth
  • 1/4 cup chopped pecans
  • 3 tablespoons pure maple syrup
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 2 teaspoons gluten-free reduced-sodium tamari
  • Salt and pepper to taste

Instructions

  1. 1. Season gluten-free flour with salt and pepper in a shallow dish. Dredge each chicken thigh in the flour, shaking off excess.
  2. 2. Heat olive oil in a cast iron skillet over medium-high heat. Sear the chicken on both sides until golden brown (about 1-2 minutes per side). Remove from skillet.
  3. 3. In a bowl, whisk together chicken broth, maple syrup, chopped pecans, Dijon mustard, apple cider vinegar, tamari, and dried rosemary.
  4. 4. Return the skillet to heat; add the sauce mixture and bring to a simmer. Nestle the chicken back into the sauce and cover loosely with foil. Simmer for about 10 minutes until cooked through.
  5. 5. Serve warm, spooning sauce over the chicken.
