  • 2 packs Ready-rolled shortcrust pastry
  • 4 medium Lemons (juice and zest)
  • 200 g Caster sugar
  • 4 medium Eggs (room temperature)
  • 50 g Unsalted butter (room temperature)
  • 2 tbsp Icing sugar (for dusting)

Instructions

  1. Preheat oven to 180°C (350°F).
  2. Roll out the shortcrust pastry, cut circles, and press them into tartlet tins. Trim excess pastry.
  3. Blind bake the pastry cases with parchment paper and baking beans for about 10 minutes until golden. Remove and cool slightly.
  4. In a bowl, whisk together lemon juice, zest, caster sugar, eggs, and unsalted butter until well combined.
  5. Pour the lemon curd mixture into the baked pastry cases, filling them almost to the top.
  6. Bake for an additional 10-15 minutes until set but still slightly wobbly in the center.
  7. Cool completely before removing from tins and dust with icing sugar before serving.
