  • 6 Tablespoons unsalted butter-melted
  • 1 ½ cups all-purpose flour
  • ¼ teaspoon salt
  • ½ teaspoon baking powder
  • ¼ teaspoon baking soda
  • 1/3 cup unsalted butter-room temperature
  • ¾ cup sugar
  • 2 eggs
  • 2/3 cup Greek yogurt
  • 1 teaspoon vanilla extract
  • Grated zest from 1 lemon
  • 2 Tablespoons fresh lemon juice
  • ¾ cup powdered sugar
  • 12 Tablespoons milk or cream

Instructions

  1. Make the Lemon Curd: In a double boiler, whisk egg yolks, granulated sugar, lemon zest, and lemon juice. Cook until thickened, then stir in cold butter until melted. Cool completely.
  2. Preheat Oven: Set your oven to 350°F (175°C) and line a muffin pan with paper liners.
  3. Combine Dry Ingredients: In one bowl, mix together flour, salt, baking powder, and baking soda.
  4. Mix Wet Ingredients: In another bowl, beat room temperature butter until creamy. Add sugars and mix well. Incorporate eggs one at a time along with Greek yogurt, vanilla extract, lemon zest, and lemon juice.
  5. Combine Mixtures: Gradually add the dry ingredients to the wet mixture until just combined.
  6. Fill Muffin Cups: Spoon batter into muffin cups halfway full. Add about one tablespoon of lemon curd in the center of each muffin and cover with more batter.
  7. Bake: Top with streusel if desired and bake for 25 minutes or until golden brown.
  8. Glaze: Mix powdered sugar with milk to create a glaze and drizzle over cooled muffins.
