1 cup low-fat cottage cheese
1 cup fresh blueberries
1 tablespoon lemon zest
2 tablespoons honey (or maple syrup)
1/2 cup almond flour
1 teaspoon vanilla extract
Pinch of salt
Instructions
In a mixing bowl, combine cottage cheese, blueberries, lemon zest, honey, almond flour, vanilla extract, and salt. Mix gently until well combined.
Scoop out about 1 tablespoon of the mixture and roll it into a ball using your hands.
Preheat your oven to 350°F (175°C). Place the rolled bites on a baking sheet lined with parchment paper and bake for 10-12 minutes or until golden brown.
Allow to cool before drizzling with extra honey and garnishing with fresh blueberries.
