  • 4 to 5 lbs beef chuck roast
  • 1 tbsp kosher salt
  • 1 tbsp vegetable oil
  • 1 sweet onion
  • 6 garlic cloves
  • 1 tbsp fresh ginger
  • 2 tbsp gochujang
  • ¼ cup brown sugar
  • ½ cup soy sauce (or coconut aminos)
  • 2 cups beef broth

Instructions

  1. Season the beef chuck roast with kosher salt. Heat vegetable oil in a large heavy-bottomed pot over medium-high heat. Sear the beef pieces in batches until browned on all sides; remove and set aside.
  2. In the same pot, sauté sliced onion, minced garlic, and grated ginger until softened.
  3. Stir in gochujang, brown sugar, soy sauce (or coconut aminos), and beef broth.
  4. Return the seared beef to the pot, ensuring it's submerged in the sauce.
  5. Bring to a simmer, cover, and cook on low heat for about 3-4 hours until tender.
  6. Serve over cooked rice and garnish with fresh cilantro.
