  • 1 bunch fresh spinach, washed and trimmed
  • 2 tablespoons sesame seeds
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon sugar
  • 1 tablespoon sesame oil
  • 1 clove garlic, minced
  • 1 teaspoon grated fresh ginger
  • Salt, to taste

Instructions

  1. Blanch the spinach in boiling water for 1 minute, then transfer it to ice water to cool. Drain and squeeze out excess water.
  2. In a dry skillet over medium heat, toast sesame seeds until golden brown (3-5 minutes). Let cool.
  3. Whisk together soy sauce, rice vinegar, sugar, sesame oil, minced garlic, grated ginger, and salt in a small bowl until combined.
  4. In a serving bowl, combine the blanched spinach with the dressing and gently toss to coat evenly.
  5. Just before serving, sprinkle the toasted sesame seeds on top for an added crunch.
