  • 1 cup sugar
  • 1/2 cup unsalted butter (or vegan butter)
  • 3 large eggs (or flax eggs for egg-free)
  • 1 cup buttermilk (or homemade substitute)
  • 2 cups fresh blackberries (or frozen, drained)
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon pure vanilla extract
  • 8 oz cream cheese (or dairy-free cream cheese)
  • 2 cups powdered sugar

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, cream together butter and sugar until fluffy. Add eggs one at a time, then stir in buttermilk and vanilla extract.
  3. In another bowl, whisk flour, baking powder, baking soda, and salt. Gradually combine with wet ingredients until just mixed, then gently fold in blackberries.
  4. Divide batter between pans and bake for 30–32 minutes or until a toothpick comes out clean. Cool for 10 minutes before transferring to wire racks.
  5. For frosting, beat room temperature cream cheese with powdered sugar until smooth; mix in blackberry puree.
  6. Once cakes are cooled, layer with frosting in between and coat the top and sides of the cake.
