  • 4 boneless skinless salmon fillets (approximately 7oz/200g each)
  • 1/3 cup honey
  • 6 tbsp unsalted butter
  • 2 tbsp rice vinegar (or apple cider vinegar)
  • 1.5 tbsp soy sauce
  • 12 cloves garlic (finely diced)
  • 1/21 tsp chili flakes
  • Olive oil (as needed)
  • Salt & pepper (to taste)
  • Optional: finely diced spring onion for garnish

Instructions

  1. Pat the salmon fillets dry with paper towels and season both sides with salt and pepper.
  2. Heat olive oil in a non-stick pan over medium-high heat. Cook salmon fillets skin-side down for about 3 minutes until golden brown; flip and cook for an additional minute.
  3. Move the fillets to one side of the pan and add butter to the other side. Baste the salmon with melted butter for 1-2 minutes.
  4. Reduce heat to low-medium; sauté garlic and chili flakes for 10-20 seconds, then stir in honey, vinegar, and soy sauce, simmering until thickened.
  5. Return the salmon to the pan, basting with sauce before serving. Garnish with spring onions if desired.
