  • 4 boneless skinless salmon fillets (approximately 7oz/200g each)
  • 1/3 cup honey
  • 6 tbsp unsalted butter
  • 2 tbsp rice vinegar (or apple cider vinegar)
  • 1.5 tbsp soy sauce
  • 12 cloves garlic (finely diced)
  • 1/21 tsp chili flakes
  • Salt and pepper (to taste)
  • Olive oil (for cooking)
  • Finely diced spring onion (optional for garnish)

Instructions

  1. Pat the salmon fillets dry with paper towels and season them with salt and pepper.
  2. Heat olive oil in a large non-stick pan over medium-high heat. Add the salmon fillets skin-side down and cook for about 3 minutes until golden brown. Flip and cook for an additional minute.
  3. Move the salmon to one side of the pan, drop butter into the other side, and tilt the pan to baste the fillets for 1-2 minutes until they are golden.
  4. Lower the heat to medium-low, add garlic and chili flakes to the pan, cooking until fragrant (10-20 seconds). Stir in honey, vinegar, and soy sauce; simmer until thickened (about 5 minutes).
  5. Return the salmon to the pan, baste with sauce, serve with extra sauce on top, garnished with spring onion if desired.
