  • 1.75 cups warm water (105-115°F)
  • 2 tsp sugar (optional)
  • 1 packet active dry yeast
  • 2 cups bread flour
  • 2 cups all-purpose flour
  • 2 tsp salt
  • 6 tbsp olive oil, divided
  • 1 jar raspberry preserves (or any jam of choice)
  • 2 cups confectioners' sugar
  • 24 tbsp whole milk

Instructions

  1. In a mixing bowl, combine warm water and sugar. Sprinkle yeast over it and let sit until frothy (5-10 minutes).
  2. In another bowl, whisk together bread flour, all-purpose flour, and salt. Make a well in the center.
  3. Pour the yeast mixture into the well and add 4 tablespoons of olive oil. Stir until combined and knead on a floured surface until smooth.
  4. Place dough in an oiled bowl, cover with plastic wrap, and let rise in a warm place until doubled in size (about 1 hour).
  5. Preheat oven to 375°F (190°C). Punch down the dough and transfer it to an oiled baking sheet; shape into a rectangle about 1 inch thick.
  6. Create dimples on top of the dough with your fingers and brush remaining olive oil over it. Cover again with plastic wrap; let rise for another 30 minutes.
  7. Bake for about 22 minutes or until golden brown.
  8. Allow to cool slightly before making cuts in desired sections and filling each with raspberry preserves.
  9. Mix confectioners’ sugar with whole milk until smooth for glazing; drizzle over focaccia before serving.
