  • 1 packet instant yeast (2 teaspoons)
  • 1 tablespoon granulated sugar
  • 1 teaspoon salt
  • 2 tablespoons unsalted butter (room temperature)
  • 3 cups all-purpose flour
  • 1/2 cup unsalted butter (chilled, for layering)
  • 1 whole egg (for egg wash)
  • 2 tablespoons milk (for egg wash)

Instructions

  1. In a small bowl, mix warm milk with instant yeast and sugar; let it sit until frothy (5-10 minutes).
  2. In a large bowl, whisk together flour and salt. Make a well in the center and add the yeast mixture and softened butter. Mix until a rough dough forms.
  3. Knead the dough on a floured surface for about 5-7 minutes until smooth. Place in a greased bowl, cover with plastic wrap, and let rise in a warm place for about 1 hour.
  4. Prepare the butter layer by pounding chilled butter between parchment paper into a rectangle; refrigerate.
  5. Roll out risen dough into a rectangle, place the butter layer in the center, fold over, seal edges, and roll out again. Fold into thirds and refrigerate for 30 minutes. Repeat this rolling and folding process two more times.
  6. Roll out dough to about 1/4 inch thick; cut into triangles and roll each triangle tightly from base to tip.
  7. Place on a lined baking sheet; cover with plastic wrap and proof for about an hour until puffed.
  8. Preheat oven to 400°F (200°C). Brush croissants with egg wash made from whisking egg and milk together.
  9. Bake for 15-20 minutes until golden brown.
