  • 300g uncooked Orzo
  • 80ml extra virgin olive oil
  • 3 tbsp red apple vinegar
  • 1 small bunch finely diced fresh parsley
  • 1 heaped tsp dried oregano
  • 1/4 tsp salt
  • Black pepper to taste
  • 150g baby plum tomatoes, halved
  • 100g feta cheese, cubed
  • 100g Kalamata olives, halved
  • 3 tbsp finely diced red onion
  • 1 small clove of garlic, minced
  • 75g finely diced green pepper
  • 75g cucumber, sliced into thin quarter pieces
  • 1/2 lemon, juiced

Instructions

  1. In a large mixing bowl, whisk together extra virgin olive oil, red apple vinegar, parsley, oregano, salt, and pepper. Add halved baby plum tomatoes, cubed feta cheese, halved Kalamata olives, finely diced red onion, and minced garlic. Mix well and let marinate for at least one hour.
  2. Cook orzo pasta in salted boiling water until al dente. Drain and rinse with cold water until cool.
  3. Combine the cooled orzo with the marinated salad mixture. Stir in finely diced green pepper and cucumber, adding juice from half a lemon to taste. Adjust seasoning if needed before serving.
