  • 8 bone-in chicken thighs
  • ⅓ cup extra-virgin olive oil
  • ¼ cup lemon juice
  • 4 minced garlic cloves
  • 1 tablespoon dried oregano
  • 2 teaspoons dried thyme
  • 2 teaspoons Dijon mustard
  • Salt and black pepper to taste

Instructions

  1. In a small bowl, mix olive oil, lemon juice, garlic, oregano, thyme, Dijon mustard, salt, and pepper until combined.
  2. Place chicken thighs in a large bowl and pour the marinade over them. Cover and refrigerate for 1 to 8 hours.
  3. Preheat your oven to 350°F (180°C). Arrange the marinated chicken in a baking dish and pour any remaining marinade on top.
  4. Bake for 40 to 45 minutes or until the internal temperature reaches 175°F (80°C). Optionally broil for an additional 2–3 minutes for crispy skin.
