  • 1 avocado
  • 1/2 cucumber
  • 2 teaspoons wasabi
  • 1/4 cup soy sauce
  • 2 cups white rice
  • 1/4 cup rice vinegar

Instructions

  1. Cook the sushi rice according to package instructions. Once cooked, mix in rice vinegar while warm and allow it to cool.
  2. Slice the salmon, avocado, and cucumber into thin strips for even distribution.
  3. On a bamboo sushi mat, place a nori sheet shiny side down and spread a thin layer of sushi rice, leaving an inch at the top edge.
  4. Lay the salmon, avocado, and cucumber slices horizontally across the center of the rice layer.
  5. Roll tightly away from you using the bamboo mat; seal the edge with water.
  6. Cut each roll into eight equal pieces with a sharp knife, wiping it between cuts for clean edges.
  7. Serve your sushi rolls arranged on a plate with wasabi and soy sauce.
