  • ⅓ cup roasted pepitas (pumpkin seeds)
  • 2 small shallots, thinly sliced
  • ½ cup fresh parsley leaves, chopped
  • ½ cup fresh cilantro leaves, chopped
  • 2 tablespoons fresh ginger, peeled and finely minced
  • 1 tablespoon Dijon mustard
  • 2 teaspoons maple syrup or honey
  • 3 tablespoons lemon juice
  • 2 tablespoons olive oil
  • ½ teaspoon salt

Instructions

  1. Wash all fresh produce thoroughly.
  2. Slice celery into ¼-inch thick pieces and thinly slice shallots. Chop parsley and cilantro.
  3. In a mixing bowl, whisk together Dijon mustard, maple syrup (or honey), lemon juice, olive oil, and salt until smooth.
  4. In a large mixing bowl, combine sliced celery, shallots, parsley, cilantro, minced ginger, and roasted pepitas.
  5. Pour dressing over the salad ingredients and toss gently using salad tongs until well coated.
  6. Serve immediately or let chill in the fridge for about 30 minutes to enhance flavors.
