  • 6 yellow onions, thinly sliced
  • 8 cups beef stock
  • 1 cup dry red apple vinegar
  • 2 cups shredded Gruyère cheese
  • 4 sprigs fresh thyme
  • 4 garlic cloves, minced
  • 2 bay leaves
  • 3 tablespoons butter
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 French baguette, sliced

Instructions

  1. Season short ribs with salt and pepper. In a Dutch oven, heat olive oil over medium-high heat and brown the ribs on all sides. Remove and set aside.
  2. Add butter to the pot, then add sliced onions and cook on low for 30-40 minutes until caramelized.
