  • 1/4 cup sliced almonds
  • 1/2 cup chopped maraschino cherries
  • 2 tablespoons maraschino cherry juice
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon vanilla extract
  • 1/4 cup chopped pecans
  • 1/2 cup mashed overripe banana

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix flour, salt, and baking powder. In another bowl, whisk together milk, eggs, and vegetable oil. Combine wet ingredients with sugars in the flour mixture until just mixed.
  3. Divide the base batter into four portions. Customize each portion with flavorings: add cranberries and orange zest to one; eggnog and nutmeg to another; sliced almonds and cherries to the third; and mashed banana with pecans to the last.
  4. Pour each flavored batter into greased mini loaf pans.
  5. Bake for 25–28 minutes until a toothpick comes out clean. Cool before serving.
