  • 1 can cream of chicken soup
  • 1 can cream of mushroom soup
  • 1 can water (use the empty soup can for measurement)
  • 2 cups instant rice (white or brown)
  • 1 envelope onion soup mix
  • 1 cup shredded cheddar cheese
  • 12 cups frozen mixed vegetables
  • 1 tablespoon butter (for greasing)
  • Dash of black pepper, garlic powder, or paprika for added flavor

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch casserole dish with butter.
  2. In a large mixing bowl, combine cream of chicken soup, cream of mushroom soup, water using the empty soup can for measurement, and uncooked instant rice. Mix well.
  3. Pour the mixture into the greased casserole dish and spread evenly.
  4. If desired, stir in frozen mixed vegetables or shredded cheese for added texture.
  5. Place raw chicken breasts on top of the rice mixture and sprinkle with onion soup mix.
  6. Cover tightly with aluminum foil and bake for 60 minutes without lifting the foil.
  7. After an hour, check for doneness; chicken should reach an internal temperature of 165°F (75°C) and rice should be tender.
  8. For a golden finish, broil uncovered for 3-5 minutes if desired.
  9. Let rest for 5-10 minutes before serving.
