  • 2 medium oranges (about 400 g)
  • 150 g almond meal
  • 100 g shelled pistachios (finely ground)
  • 6 large eggs
  • 200 g granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon fine sea salt

Instructions

  1. Preheat the oven to 170°C (340°F) and line a springform pan with parchment paper.
  2. Boil the oranges in water for about 60 minutes, then cool, remove seeds, and puree until smooth.
  3. In a mixing bowl, whisk together eggs and sugar until pale; add the orange puree.
  4. In another bowl, combine almond meal, ground pistachios, baking powder, and salt; fold into the wet mixture until just combined.
  5. Pour batter into the prepared pan and bake for 50–60 minutes or until set.
  6. Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
