Ingredients

Scale
  • 2 cups sugar
  • 1 cup butter (softened)
  • 1 1/2 teaspoons pure vanilla extract
  • 3 large eggs
  • 2 1/2 cups cake flour
  • 1 cup baking cocoa (sifted)
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1/2 cup instant chocolate pudding mix (small box)
  • 2 1/4 cups buttermilk
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup water
  • 1/2 cup butter
  • 1 teaspoon vanilla
  • 1 cup baking cocoa (sifted)
  • 3 1/2 cups powdered sugar
  • 3 tablespoons heavy cream (more or less for consistency)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9×13 inch baking pan by greasing it.
  2. In a large mixing bowl, cream together softened butter and sugar until fluffy. Add eggs one at a time, mixing well after each addition, then stir in vanilla extract.
  3. In another bowl, whisk together cake flour, sifted cocoa powder, baking soda, and salt. Gradually add this mixture to the wet ingredients while alternating with buttermilk until just combined.
  4. Fold in semi-sweet chocolate chips gently before pouring the batter into the prepared pan.
  5. Bake for about 60 minutes or until a toothpick comes out clean from the center.
  6. While cooling, prepare the ganache icing by melting water, butter, and vanilla together in a saucepan, then stirring in sifted cocoa powder followed by powdered sugar and heavy cream until smooth.
  7. Once cooled, pour the ganache over the cake.
