  • 12 tablespoons milk
  • Crushed chocolate-covered espresso beans
  • Cocoa powder dusting
  • Chocolate sprinkles or shavings

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a medium saucepan, melt the butter over low heat. Stir in the sugar until combined. Beat in eggs one at a time, then add vanilla extract.
  3. In another bowl, whisk together flour, cocoa powder, salt, and espresso powder. Gradually fold this mixture into the wet ingredients and stir in milk until smooth.
  4. Fill cupcake liners about ⅔ full and bake for 18–20 minutes or until a toothpick inserted comes out clean. Let cool completely.
  5. For the coffee buttercream, beat softened butter until creamy, gradually add powdered sugar, then mix in dissolved espresso powder and milk to achieve desired consistency.
  6. Frost cooled cupcakes using a piping bag and decorate with your choice of toppings.
