Ingredients

Scale
  • 1 cup all-purpose flour
  • 1 ½ tbsp cornstarch
  • 1/4 tsp salt
  • 1/4 tsp baking soda
  • 1/4 tsp baking powder
  • 6 tbsp unsalted butter
  • 1/2 cup granulated sugar
  • Zest of a small lemon
  • 3/4 tsp pure vanilla extract
  • 2 large eggs
  • 1/2 cup sour cream
  • 1 lb fresh strawberries
  • 2 tbsp granulated sugar
  • 4 oz cream cheese
  • 3/4 cup powdered sugar
  • 1 cup heavy cream

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, combine flour, cornstarch, baking powder, baking soda, and salt. In another bowl, beat butter and sugar until fluffy; add eggs one at a time and then sour cream.
  2. Gradually mix dry ingredients into the wet mixture until just combined. Pour into a greased dish and bake for about 15 minutes or until golden brown. Cool completely before cutting into cubes.
  3. Toss chopped strawberries with sugar and let sit for 10 minutes to release juices.
  4. Beat cream cheese with vanilla and powdered sugar until smooth. Whip cold heavy cream separately and fold into the cream cheese mixture.
  5. In serving glasses or a trifle dish, layer cake cubes, strawberries, and whipped cream mixture repeatedly until full.
