  • 5 butter croissants
  • 1/2 cup unsalted butter
  • 1/2 cup granulated sugar
  • 1/2 tsp salt
  • 2 eggs
  • 1 cup almond flour
  • 2 tbsp all-purpose flour
  • 1 cup water
  • 1/2 cup granulated sugar (for simple syrup)
  • 10 tbsp sliced almonds
  • powdered sugar for dusting

Instructions

  1. Preheat oven to 350°F (180°C) and line a baking sheet with parchment paper.
  2. For the simple syrup, combine 1 cup water and 1/2 cup sugar in a saucepan over medium heat until dissolved; set aside to cool.
  3. In a mixing bowl, beat together softened butter, sugar, and salt until creamy. Add eggs one at a time, mixing well after each addition. Gradually stir in almond flour and plain flour until smooth. Place filling in a piping bag.
  4. Slice each croissant in half horizontally and brush the cut sides with simple syrup.
  5. Pipe almond cream into the bottom half of each croissant, place the top half back on, then add more filling and sprinkle with sliced almonds.
  6. Bake for 15-20 minutes or until golden brown and frangipane is set.
  7. Allow to cool slightly before dusting with powdered sugar and serve warm.
