  • 2 cups shredded Monterey Jack cheese
  • 8 flour tortillas
  • 1 tablespoon vegetable oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Chopped cilantro for garnish

Instructions

  1. Prepare the chicken by boiling or baking it until fully cooked; then shred it.
  2. In a skillet over medium heat, add vegetable oil and sauté onions with garlic until softened.
  3. Mix shredded chicken with sautéed onions, garlic, cumin, chili powder, salt, and pepper; cook until heated through.
  4. Pour a small amount of enchilada sauce into a baking dish; fill each tortilla with the chicken mixture and roll tightly.
